I was wondering what your thoughts might be on picking up an i7 6800 instead of the Intel i7 5820?

If you don't perform those specific tweaks, things might run fine, though that's assuming there aren't other underlying hardware conflicts at play.

Since you've already got a budget set aside and don't need to buy most of the parts, you'll have plenty left over for the heavy hitters.
Jumping to an I7 6700 would be a decent move, but honestly, going for a hexa-core is much better—plus, you can overclock it.

What kind of PSU are you running?
If it handled the i7 920 @3.4 GHz, it should handle an overclocked 5820K just fine, but strictly speaking...
P.S.
You should probably dig into which X99 board to grab. From what I've seen on Newegg and similar sites, people complain about reliability issues on quite a few models, even some of the pricier ones.
