This tuna and veggie salad is a total game-changer. It might be a bit ingredient-heavy, but I’d much rather polish this off quickly than settle for a mediocre sandwich.
- whole wheat pasta
- green and/or yellow beans
- tomatoes
- canned tuna
- egg (one, two, or however many you want)
- olives
Boil the pasta, beans, and eggs separately. Chop the beans into bite-sized pieces and slice the eggs. Toss everything together with diced tomatoes and flaked tuna, then finish it off with olive oil and a dash of pepper. It's delicious served warm, but honestly, it's phenomenal cold.
