I honestly don't understand why people make such a massive deal out of yeast like it’s some kind of high-tech laboratory ingredient when it’s really just the soul of the whole damn process... You can buy those little packets at the local grocery store and think you're a master baker, but if you don't respect how it lives and breathes, you're just wasting flour and wasting my time... It’s about the life in it, the fermentation, the way it transforms a simple dough into something actually worth eating instead of that tasteless brick most people call bread... Honestly, if you aren't paying attention to the temperature and the feeding, you might as well just be eating cardboard... 😠
Oh, man, tell me about it... seriously, that is the absolute truth!
Look, if you're standing there in the grocery aisle and they’ve got more than one brand of yeast sitting on the shelf, for the love of God, do not just grab the cheapest bag because you're trying to save a couple of bucks... seriously, don't do it. You always, always have to check the expiration date first. And even then, honestly? Don't get too cocky thinking a recent date guarantees anything, because sometimes those labels are just plain lying to you and you end up with nothing but a flat, lifeless dough that's basically useless...
Does anyone else still have that phrase burned into their brain... "the dough is going to be rich, soft, and airy!"... I swear, I can still hear it echoing in my head like some sort of culinary prophecy... 🙏 🙏 🙏
