Is it okay to use "Sir/Ma'am" in professional emails?

Is this a thing in places like Atlanta, for example?

I had this boss who was a bit younger than me, originally from Atlanta, and she kept calling me "sir" even though I'm only 40.
Is that just how people are from that part of the country?

Back when I was in middle school about 55 years ago, my physics teacher always wore a suit and tie,
and he would address all his students very formally. I've also heard—though I don't know if it's actually true—that in Mexico, using formal titles
is more about being wealthy rather than being older or smarter.😀
Of course, using overly formal language can also be a way to mask some sarcasm. I'll let you guys be the judge of that!
