I see plenty of threads floating around here about healthy eating, but I’m actually more interested in *how* everyone handles their meal prep. For instance, since my schedule is usually pretty hectic, I don't have much time for anything that requires hours over a stove—so I'm always hunting for those "quick-fix" recipes! 🙂
So, please, jump in! Tell us how you whip things up, chime in on other people's ideas, and let's get a conversation going.
Here’s one of my super simple go-tos: tuna pasta.
-15oz whole grain graham pasta
-a can of tuna in brine (definitely not the oil-packed kind!)
I just dump the tuna into a pan and stir in two small spoonfuls of sour cream—though, if you're currently cutting or watching your macros, you can totally skip the cream to keep it lean. It helps everything bind together better. You just warm it up slightly, then toss it all together with the cooked pasta. Of course, I finish it off with a drizzle of olive oil. Total cook time? About 15 minutes. Honestly, it’s a pretty solid, filling meal for me.
Also, when I boil eggs—and I tend to cook them until they're quite firm because I love the whites—I’ll sometimes take two of the yolks and mix them right into the pasta. I usually try to avoid yolks since they're high in cholesterol, but every once in a while, using them this way isn't a big deal. 🙂
When it comes to proteins like chicken breast or veal, I mostly stick to steaming them. For sides, I’ll usually steam up some sweet potatoes, beans, lentils, or whatever veggies are on hand...
