Whenever I hit quote to type out a question or an answer, I feel like I’m flying blind—I have no idea if anyone has actually replied to me unless I head all the way back to the main forum index, click through to the thread, and check manually. It feels like such a chore. Is there a quicker way to see if there's a response without having to navigate all the way back to the start?

I assume you mean this

The first envelope is open, which means there are new posts (plus the title is bolded). You also have this arrow—circled in red—that takes you straight to the first unread post if you click it..

The second envelope is closed, indicating nothing new has been posted.

The second folder icon is closed, which just means there's nothing new to see there.

That is essentially how I tend to handle it, anyway.

I’m a little confused by the workflow here—whenever I hit submit on a reply, the page that loads doesn't show my message in an envelope or anything like that. It just forces me to navigate back to the previous page manually. And if I try to use the green back arrow, it just takes me to the exact state the page was in before I clicked "submit," which means I have to redo that whole slow, tedious process all over again.

Once you actually submit your reply, you'll be able to see your response within the thread...

Just scroll back up to the top, click the subforum name in the upper left corner, and from then on, you'll be able to see what kind of envelopes are being used...

I'll give that a shot, but I'm wondering—if I leave the subforum page open, will I see updates happening in real-time? Or do I need to navigate away and come back to refresh everything to see what's new?

It doesn't work like that; it isn't a real-time thing, unlike chat applications.

You have to refresh the page if you want to see any updates.

Personally, I prefer having my subscriptions active without the constant email notifications.
That way, when I log in, I can just head straight to my user control panel to see everything at once—any threads I've replied to with new posts, plus updates from the subforums I follow, like Help or Moderator sections.
