How to convert images to text?

I have a brief inquiry for the group: does anyone happen to know of a specific software capable of converting images into text? Specifically, I am looking for a program that operates on the principles of optical character recognition...
While I have stumbled upon several basic programs, my requirements are somewhat more specialized; I need something capable of recognizing mathematical formulas, not just standard alphanumeric characters... Does anyone here possess such knowledge? If you could provide a link, it would be an immense help to me... thank you.

Does anyone know of any other programs that can convert images into text, but where you can actually save the result back onto your hard drive as a JPG or GIF?
