Please refrain from mockery; I am dealing with some health issues and need advice. What is the appropriate terminology to use when describing flatulence or gas to a doctor? Is simply saying "farts" acceptable, or should I use more clinical language?

Flatulence.

Saying you have gas might not be the most clinical term out there, but honestly, most doctors will know exactly what you mean.

Using "gas" is perfectly fine too.

There's your answer, so let's move on.
