It’s pretty hard to find good brown lentils around here, and honestly, they’re my absolute favorite. 😢
You can whip them up into a thick stew, too. It's kind of like making a hearty bean soup, just loaded with way more veggies.
Just toss in some celery, onions, carrots, potatoes, tomatoes... let it all simmer away. It's killer.

Lisa Wells65, are these recipes specifically for turkey liver or can I just use whatever kind is on sale?
Anyway, the way I liver usually handles it is just searing it on a cast iron skillet and then drowning it in a mix of olive oil and a ridiculous amount of garlic.
The smell is intense, but man, it's killer 🙂

Pesto just makes me feel sick... there’s way too much oil in it for my liking. Anyone got any tips on how to cut back on the grease or what I could swap it out for?
I'm not some health freak or overdoing anything, it's just always been hard on my stomach when things are this greasy. 😢

Just gonna drop another one of my little guilty pleasures here... one of those weird combos that sounds totally wrong on paper, but honestly? It’s killer if you actually have the guts to try it 😬
Curry Chicken Lentil Stew

First, just dice up some chicken breasts, sauté them until they're done, and set them aside
Sauté some onions, toss in some canned crushed tomatoes—maybe two cans or just a few really ripe ones from the farmer's market—and let that simmer down until it gets thick
Right before you call it quits, throw in a can of lentils... though if you want to be fancy, just use the ones you cooked in an Instant Pot, takes like ten minutes tops
Mix the chicken back in, season it however you feel like, and hit it with the curry powder
It should turn out like this thick, heavy stew...

Anyway, here's a recipe for Ratatouille, that old-school rustic dish from France 😁.
Even the rats would love this stuff 😁.
Nothing fancy or modified here, just pure healthy veggies, so I guess it counts... Just don't go overboard with the oil since there's a lot of sautéing involved.

Sauté one red and one yellow bell pepper, diced into 0.7 cm pieces, in olive oil; set those aside, then sauté some diced eggplant in olive oil... then do the same for some diced zucchini.
Throw all that into a bowl on the side and mix it up.
Then you sauté some small purple onions until they soften, toss in 3 cloves of garlic, and then add two tomatoes cut into cubes. Once the water evaporates from the tomatoes, throw the veggie mix back in, season everything, and stir in 15 torn basil leaves.
It’s meant to be eaten cold, maybe with a few drops of lemon juice right before you serve it.
The colors look insane, but unfortunately my phone camera is garbage so the photo turned out pretty mediocre 😢

Anyone else down for this kind of culinary sin?

I take some chicken or turkey breast cut them up into little cubes, and toss them in a non-stick skillet with basically zero oil.
Once they're cooked through, I pour over some beaten eggs and let the whole thing sizzle and set.
It’s killer when you pair it with some sautéed Swiss chard and olive oil.

Since chicken breast can be pretty damn bland and flavorless most of the time, I usually just leave it marinating overnight in garlic, fresh cracked pepper, and some good olive oil.
Honestly, it’s way better that way... 🙂

Red Pepper Salad, Recreation Style

Clean those peppers, chop them into big chunks, and spread them out on a baking sheet—skip the oil entirely this way, keeps things cleaner
Throw them in the oven until they get that nice, dark color... maybe even a little charred in spots if you're lucky.
Pull them out and cover them up tight for about half an hour to let them steam... or just toss them in a plastic bag if you want to be lazy.
Peel off the skins.
Roughly chop everything up, toss in a spoonful of extra virgin olive oil, a massive pile of garlic, and whatever herbs you have lying around, like parsley or basil.
Pro tip: you can freeze the peppers after peeling them but before seasoning, so you've always got a quick little salad ready to go whenever...

It never feels thick enough for me unless I just throw it in the blender... then it's perfect. 🙏

Just cut back on the water and use a tomato puree instead. It thickens up just fine that way.
As for stuffed cabbage rolls... man, I don't know. I can't even wrap my head around eating hot cabbage rolls in the middle of summer. They'd probably stay pretty runny 😁.
If someone's stomach can't handle a heavy roux, you could always just whisk a spoonful of flour into a little bit of water first, then pour that in... it still thickens it up, but it's much easier on the gut.

I never bother making roux for my beans, peppers, or even cabbage rolls.
It’ll thicken up enough just from simmering on its own... 🤷
If things look too thin, you can always toss in a potato, mash it up, and stir it back in to get that consistency.
Honestly, you can tweak pretty much any dish to make it healthier and just better overall.
I don't stress over cooking all that much anymore, but I stick to a few basic rules:
no flour-and-fat thickeners, nothing breaded, and zero deep frying
I stick to good olive oil or cold-pressed sunflower oil—you can find the good stuff at Whole Foods or specialty health shops, though it costs twice as much, but the flavor is night and day
I use way less oil in my cooking, sometimes none at all (if you actually have decent non-stick or grill pans)
I eat whole grains
And I stick to whole wheat bread.
What's my point? You can change so much just by making tiny adjustments to classic recipes without losing any variety in what you eat...

So, oatmeal, it can be your go-to breakfast or just a sweet little afternoon pick-me-up.
This morning I had 🙂
Basically, you just toss those breakfast grains into some boiled milk and grate an apple right in there. Throw in some cinnamon, maybe some crushed nuts, dried fruit, or a drizzle of honey if you're feeling fancy.
Honestly, the sky's the limit (well, except for calories, obviously)
. Once it thickens up, just let it sit for a second. It should have that nice, thick consistency.
Eat it while it's warm.

Hit me with some snack ideas 🙂
I’m sick of looking at vegan recipes or anything grainy... and honestly, yogurt, fruit, or a handful of almonds just doesn't cut it for me. I'm still starving after five minutes. 😢

I guess I’d feel the same way 😁.
Don't sweat it too much if it's just a one-off thing.
Personally, I find that paying for a month of CrossFit upfront is the only way to move me... because then it feels like I'm just flushing cash down the toilet if I don't show up. 😁
When you're just working out at home, it's way easier to lose steam since nobody's watching you, there's zero accountability, and you have to fight tooth and nail just to make it a habit.
My advice? Pick specific days and a specific time and stick to it...
