Linda Johnson15 said:This particular cake was made using modeling chocolate.😉 The flavor is totally different from fondant because you still get that rich chocolate taste; you've basically just changed the texture of the chocolate itself.🙂

Modeling chocolate can come in a white chocolate base (though unfortunately, you can't get it any whiter than that), or you can dye it any color you want—red, yellow, green, pink, purple... you name it.

I just wanted to warn everyone that this isn't pure chocolate.
As for modeling chocolate, it's mixed with honey or corn syrup, so it's pretty sweet...😉

nimblescout5 said:Basically, I’m asking on behalf of a friend. She visited a few local bakeries, and everywhere she went, they insisted the base couldn't be any smaller than, what, 8 inches? It turned out to be way too massive for a table meant for ten people. To top it off, one shop wanted to whip up a mini version just to show her the concept, and the price tag shot up past $200 :-O

If I may, the reason they insisted on a 20 cm base is because she wants a tiered cake. To keep it proportional and actually looking decent, that's the absolute minimum size. For a two-tier cake of that diameter covered in fondant, the price isn't even that high $20, considering a single kilogram of fondant alone costs $29.
Why doesn't she just get a 20 cm cake? It should be plenty if she serves other desserts alongside it.
By the way, that single-tier cake you posted is gorgeous—really elegant...

Nathan Cox25 said:Terry Miller21—what’s the actual difference between Ticino mass and the stuff you mentioned?

There isn't much of a difference; they just added dark chocolate to tweak the color.
I just wanted to give you a heads-up since that photo showed chocolate fondant and I know you aren't a fan. I didn't want you to be disappointed if they use chocolate instead, because honestly, I don't think I can replicate that exact same effect using chocolate rather than fondant...

it would have been a different vibe altogether

Nathan Cox25, I get that you aren't a fan of fondant, but what you're seeing in this photo is chocolate fondant, so I don't think I could achieve this specific look using plain chocolate. Honestly, the cake is just beautiful—simple and elegant.
That said, fondant can actually be quite good if it's made with white or milk chocolate instead of just being pure sugar.

Arthur Newman77 said:I’m totally feeling this, honestly, but here's the catch—that cake in the photo looks pretty small, right? If we tried to scale it up for a bigger crowd, just imagine how massive those slices would end up being... (the restaurant owner actually pointed that out to me, which I hadn't even considered, oops...) Anyway, I really hope we can pull off something similar to this because I am absolutely obsessed with it...

That cake is adorable. Why not make a larger rectangular version and just replicate this decoration on the front? I think it would look just as stunning.

Jacob Ortiz62 said:I’m curious, what did you all end up paying for your wedding cakes?
We were recently presented with a quote for a very basic, two-tier wedding cake intended to serve about 120 guests—just a simple cake-on-cake setup, no fancy stand, absolutely zero special decorations, no little bride and groom toppers, nothing at all for $800?! That works out to roughly $6.75 per slice, and honestly, I can't help but wonder if that's just an astronomical amount for something so plain?😕

That's incredibly expensive.

Paul Fisher9 said:Help, does anyone have any idea where I can pick up a deep-dish cake pan? A friend of my dad's suggested I make a standard wedding cake, but honestly, I’m dead set on doing a massive, extra-tall tier, and now I'm stuck because I have no clue where to find a pan deep enough to actually pull off a wedding-style height??

Paul Fisher9 said:I saw those cake pans you were looking at, but honestly? They’re way too shallow. I mean, sure, if you’re just whipping up a casual birthday cake for a kid's party, they’ll do fine. But for a wedding cake? No way. Not happening. They just don't have the height needed to get that professional, tiered look. The diameter is alright—you can always just stack two together if you really have to—but man, they seriously need to be deeper. Just a little more depth and they'd actually be useful for anything beyond a basic snack cake.

They told me 10/10.$4.00 One at a time? Seriously? That feels like way too much to me!

I think I saw a set at Muller that included square, round, and even a heart shape. If not there, I'm pretty sure you could find what you need at a Hobby Lobby.

To get that extra height, just bake two separate sponge layers plus cream; that should be more than enough...

If you're looking for more width, you could just join four of those cakes together, so it wouldn't matter if they aren't perfectly flush.

Do you have a photo of what you're envisioning? It would be easier to give advice...

Bridesmaid said:Did you make this?? That cake looks incredible!👍

😘 Thanks. Yeah, I made it, and it was a total chocolate symphony—chocolate, chocolate-walnut, and chocolate mousse.
With these slanted surfaces, it’s actually pretty tough to make our moist cakes look as polished as the ones they serve here in the States.

Regarding the cake, since I'm from Indianapolis, my Aunt Eve is going to be making it. I know her personally, so I trust her more than Aunt Kate...
I’m thinking it could work like this—maybe in a brown palette, though... since we're going for that full autumn vibe.

I'm actually loving this whole unconventional approach...
As far as those cakes go, I’m definitely stealing ideas! They look incredible...😉

I have a soft spot for these tilted pieces too, even if they are a massive pain to work on. Here is one I finished recently—maybe someone will find some inspiration in it... 🙂

They were honestly so delicious, and my guests absolutely loved them—I think it was because they’d never seen anything quite like them before! 😉

Carol Richardson15 said:Yeah, I honestly have no clue what she's even talking about either... 🤷

I assume that’s what she meant, though I have to admit... the cake looks pretty great to me.

The idea came from the forum, I just grabbed an image from Google and ordered those little figures off eBay 😁
