It’s funny, because when he's working, he has to have every single receipt accounted for just to make sure his books balance perfectly!
You need every single receipt and certificate.
The venue owner is just renting you the space; they aren't responsible for the food or anything else you serve.
As the organizer, the liability for food safety falls squarely on you. (I heard about a situation near a small Midwestern town where inspectors showed up around midnight, right in the middle of the gift giveaway).
Keep your receipts and you can sleep at night... 😉
p.s. My godmother even had to produce a receipt from the florist. 😁
