Yeah, I’ve heard people say the same thing—that if they absolutely had to choose a type of cancer, they’d pick thyroid cancer over anything else.

I've been exactly where you are. It was literally the same thing. You didn't mention it, but I had issues whenever I drank anything—water or otherwise. I had slightly fewer problems while eating. Those two symptoms cleared up after a week or two (I can't recall the exact timing), but my voice didn't return to normal until two or three months later.
The issue occurs during surgery, specifically when they insert that breathing tube. Sometimes they’re careful, but other times they aren't as attentive, and that's when you end up with damage.
