I’ve been absolutely craving zucchini lately, so I’m planning to whip up a little savory mix using some low-fat cottage cheese today.
The idea is to grate the zucchini and squeeze out all that extra moisture before folding in the cheese, a bit of paprika, and some salt. I'll mix it all together and shape them into these bite-sized patties to bake on parchment paper in the oven. I might even toss in some rolled oats—just pulse them in the blender first to get the right texture—to help everything hold together better.
I think I'll serve them alongside some fresh bell peppers and a cold glass of buttermilk. 😍

Veal and Onion Salad

First, you just slow-cook the veal until it's tender, then toss it together with some sliced onions, a drizzle of pumpkin seed oil, and a generous crack of black pepper.

It’s quick, it’s nutritious, 🙂
and honestly, don't let that cooking liquid go to waste—you can easily repurpose the broth for all sorts of other dishes.

Honestly, this recipe feels pretty played out at this point 😁 , and after eating oatmeal for a full year straight, I’ve officially hit a wall. These days, I just toss them into boiling water with a tiny pinch of salt and let them simmer for a few minutes—which gives me just enough time to peel some fruit or grate something else—before stirring in some processed fruit. 🙂
The whole milk and yogurt routine just doesn't cut it for me anymore.

I am absolutely obsessed with green beans 🙂

Green Bean Salad

green beans
pine nuts
canned tuna in brine
a squeeze of lemon juice
a few olives
some hard cheese
a teaspoon of mustard
black pepper
olive oil and balsamic vinegar

I toasted the pine nuts in a pan for a bit before tossing them into the mix🙂

Tuna Salad

# tomatoes
# arugula
# canned tuna in brine
# capers
# 1 ball of fresh mozzarella
# basil
# balsamic vinegar and a drizzle of olive oil


A hearty oat and barley porridge


# mixed oats and barley
# 1 bag of frozen veggie medley (like Bird's Eye / Green Giant)
# tomato puree

Instructions

Boil the veggies, then toss in some toasted grains (just lightly toast them in a dry pan first), give everything a gentle stir, and finish it off with the tomato puree.

Zucchini Bolognese

# shredded zucchini
# onion
# seasonings
# tomatoes

Instructions

Sprinkle a little salt over the shredded zucchini to draw out the moisture, then sauté it with some onions and a splash of olive oil; stir in some oregano and thyme, and add the tomatoes toward the end. It’s lovely served alongside a crisp green salad or some sliced cucumbers.

Summer Squash with Chicken Filet

# 15 oz chicken breast
# green beans
# bell pepper
# tomatoes
# cucumbers

Instructions

Finely chop all the vegetables and sauté them together in a bit of water, then stir in the finely diced chicken, finishing the whole thing by adding some sliced cucumbers.

Look, these aren't exactly gourmet masterpieces, are they? But isn't the real point that you can tweak any of them to suit your own tastes, and they're incredibly quick to whip up?

Maybe try to hold back just a little on the chocolate.
To start things off, why not try cutting your portions in half?
Or perhaps you could try mixing in some almonds or maybe some Brazilian nuts instead.
You can always satisfy that sweet tooth through fruit or different kinds of trail mixes.
Try to build a habit of eating regular meals if you have the chance.
And drink plenty of water... you should really try to find an ideal breakfast that actually meets all your nutritional needs.

As for exercise, I’m certainly no expert or anything.
For me, it’s mostly running, using the elliptical, and cycling; honestly, I’m a bit intimidated by the gym and those massive bodybuilders. 😁
The time I spend exercising is roughly about an hour a day.
Just keep moving!

Regarding time... I managed to drop 8 kg over a four-month stretch. Right now, I'm sitting at 60 kg and I feel great. I was stuck at the same weight for quite a long time, so don't get too obsessed with the scale—focus more on quality. 😉
(I mean kilograms 😁, obviously, because balance is everything when it comes to diet!).
I'm 170 cm tall, and I think it's perfectly fine since I feel good!

Ditch the chips and those chocolate bars.
Try to stick to actual, regular meals as much as you can.
And please, don't go expecting to see massive results in just six weeks.
