Well, there are plenty of nutritious grains out there that you can easily mix with beans to boost the protein content. I always tend to add some dried meat to my beans; it’s one of the few traditional dishes I actually bother making from scratch.

Beef Stew - Powered by Steve Karapandža
I said I’d post something once I finished eating, and here we are. Picked up some of Steven's recipes and whipped up a batch of beef stew.

Ingredients
- 2.2 lbs beef chuck
- a few cloves of garlic
- 5 oz smoked bacon, diced
- 2 onions
- 1 carrot, diced
- 1 parsley root, diced
- 3.5 oz celery, diced
- 1.1 lbs potatoes, diced
- 2 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- bay leaf
- 2/3 cup tomato puree
- 1/2 cup vegetable oil
- 1/2 cup white wine
- 6 cups beef bone broth
- bunch of fresh parsley
- salt
- freshly ground black pepper

Instructions
Sauté the finely chopped onions in hot oil. Once they turn golden, toss in the diced bacon, the prepared meat, and some sausage. Sauté briefly until the liquid reduces. Add the diced root vegetables, garlic, cayenne, smoked paprika, and tomato puree, then sauté for a bit longer. Pour in the wine and bone broth, add the potatoes and the bay leaf, and season with salt and pepper to taste. Simmer on low heat until the meat is tender (usually about an hour after adding everything). Finish it off with a sprinkle of fresh parsley.

In any case, I didn't get much done today. On my way home from work, I ended up grabbing some subpar pizza—honestly, it felt more like chewing on gravel than actual food. I just didn't have the energy to cook... we ate it on the go, then rushed off to take my little one to the dentist. We'll just have to figure out dinner tomorrow. It's anyone's guess what the schedule holds... 🙂
