Does anyone here actually know their stuff when it comes to bikes? I’m trying to figure out if the wheels on a trekking model are supposed to be perfectly line…

You’re totally right, I actually realized that just watching how they get mounted... I ended up putting a 622x28 Slick tire on my own 622x19 rims, and honestly, I'm pretty happy with it so far..
