I’m probably just overthinking things here, but since I'm still pretty new to this whole fitness journey, a coworker actually shared a recipe for oat "nuggets" with me.

Ingredients: fat-free cottage cheese, ground oats + whatever else you want (like flaxseed), cumin, salt, pepper...

Mix the ingredients together until the ratio is right—you want it firm enough that it doesn't stick to your fingers, making it easy to shape into small patties or nuggets.
Once they're shaped, just pan-fry them in a little bit of oil.

They’re honestly delicious and really filling; one nugget about the size of your palm comes out to roughly 100 kcal per Serving.

Thanks for the recipe!

I’m pretty much a total newbie to this whole diet thing, so little recipes like this are actually a huge help. To be honest, I haven't even really gotten started yet 🙂 I still haven't quite figured out what I'm supposed to eat before or after a workout, but I'll get there, I guess. Today is my first day at Gold's Gym, so we'll probably just pester the trainer with questions all day. 🙂

I have this friend who’s gone full vegan—completely obsessed with plant-based living—so I find myself scavenging a bit of his food every now and then. For the most part, though, my diet hasn't changed much over the years; I mostly stick to those heavy, traditional comfort meals you'd get from your grandmother or mom back home.
Today, following a recommendation, I finally gave bulgur a shot. To me, it feels pretty similar to rice, and I actually quite like it as a side dish or tossed into a salad.
If anyone has any clever ideas for what goes well with bulgur, or if you think it's actually worth keeping in the pantry, feel free to weigh in...

a few thoughts

MEATBALLS
/either veggie style or mixed with ground beef or tuna, for example.
Just cook it according to the package instructions, let it cool down, then grate in some carrots or zucchini... use whatever spices you're feeling (mint, basil, parsley), salt, pepper, chili... add egg, meat, or tuna... mix it all together—if it feels too soft, throw in some breadcrumbs. Then shape them and either pan-fry them or bake them in the oven until they're set.

''Risotto'' style / Salad
Briefly sauté the bulgur in some oil; then pour in broth, water, or wine and let it simmer for about 5 to 8 minutes. You can toss in clams, meat, or whatever else you fancy—basically treating it like a risotto. Or, you can just let it cool once it's cooked and toss it with lemon zest, olive oil, salt, and pepper... maybe some cucumber and tomato for a veggie vibe.

Refreshing Summer Salad

200g tofu (20g protein) 180kcal
100g red lentil pasta (25g protein) 333kcal
cherry tomatoes
pineapple
low-fat yogurt

Just sear the tofu with some spices, boil the pasta, and toss everything together... total protein hit is around 650kcal :P
