I'm looking for some advice—is this build actually worth grabbing, or should I take this same budget and put together something better myself?

Man $667 overpriced for those specific parts.
Check this out—you get a beefier processor and likely a better motherboard and SSD for about $400 less:

CPU AMD Ryzen 7 5700X BOX, AM4, 100-100000926WOF
Gigabyte B550 Aorus Elite V2, Intel B560 chipset, AM4
DDR4 16GB (2x8) Kingston 3200MHz Fury BEAST C16, KF432C16BBK2/16
Asrock RX6800XT Phantom Gaming D 16G OC, 16GB GDDR6, HDMI, 3x DP, 90-GA28ZZ-00UANF
Samsung SSD 500GB 980 M.2, PCIe 3.0 x4, MZ-V8V500BW
Napajanje Seasonic 650W G12 GC 650, 80 PLUS Gold, G12-GC-650
Be quiet! Noctua NH-U12S, BK006
Corsair ML120 Extreme, ACFAN00187A
NZXT H510 Elite, PH-EC416PTG_BK

TOTAL:
$1,600.00
$3720 Best Buy

You could go even cheaper by swapping the 5700X for an R5 5600 and picking a budget motherboard and case. That would put you closer to $0.00, with performance matching what you're seeing at Links.

No worries. By the way, I went with the 500GB SSD since that’s what was in the build you originally suggested. If I run out of space later, it'll be a breeze to just pop in a 👍
.
