What actually counts as a top-tier zombie flick?? I haven't really delved into the genre much, so I'm curious to see what people suggest...

Absolutely. Zombie horror is such a fantastic genre, whether it’s genuinely bone-chilling or just laugh-out-loud ridiculous—kind of like those early cult classics by Peter Jackson.
It’s funny, actually. I’ve been spending some time reading scripts online lately, and I’ve started to notice that zombie stories seem to be some of the best-written pieces out there. By that, I mean the atmosphere; there’s a specific quality in the writing that really bridges the gap between the page and what you eventually see on screen. Think about the work of Roger, or the Remy brothers and their kind.
Hmm, maybe just a quick tangent here:
Take *Dracula*, for instance. That novel essentially captures—or was heavily inspired by—the terror surrounding syphilis, which back then was an incurable nightmare that didn't just kill people, but fundamentally attacked human sexuality (it's all right there in the text). It strikes me as strange that modern Hollywood—which has largely overtaken literature in our culture—hasn't drawn a similar parallel with the AIDS-zomb concept. The ingredients are all there: the contagion, the death... you just need the element of sex.
