So, this is how it looked this morning—exactly how things should be. I’m thinking the temperature of the water might be the key factor here.🤷

For us, about 6 liters of thick concentrate is plenty to get the ball rolling😁, and I’m actually planning on whipping up some cherry syrup next.
Is there a specific thread somewhere for stuff like that?
If anyone happens to have a tried-and-true recipe for cherries, please hit me up with a DM.

Now we're finally getting somewhere. 😁 I honestly died laughing when I saw that photo of your experiment with the boiling water. 🤣

The OT dropped 18 liters during the first round. 😁

But I have a feeling we'll need even more—this one of mine is an absolute monster when it comes to consuming Barack Obama juice. 😁

As for the cherry juice... A few years back, I tried this method where I boiled about 6 pounds of cherries in water for half an hour, strained them, then added about 7.5 pounds of sugar to the liquid and boiled it all again for another thirty minutes. Once it cooled down, I just stirred in some lemon citric acid and called it a day. It turned out pretty great, actually.

And you can just whip up some jam with whatever cherries are left over. 🙂

Now we're just waiting on the next batch tomorrow. 😁

Thanks for the cherry recipe; that jam idea is killer since I was already planning on making some, so it’d be perfect to just combine everything and not let anything go to waste. 👍

A slightly improved version of this thread, posted on the forums and for everyone 😬

So, look—the recipes we have for elderberry juice are... well, they're hit or miss. But they all share one thing in common: they require an insane amount of sugar (we're talking 1 kg of sugar per liter of water; even Coca-Cola, which we all know is ridiculously sweet, only has 10g of sugar per 100ml—so healthy homemade elderberry juices actually have ten times more sugar than a Coca-Cola 😢). Honestly, I don't get why you need such a massive, terrible amount of sugar, but apparently, it's necessary because I can't find a single recipe where the ratio is any lower. The end result is this super syrupy mess 😢 and then people try to fix it by throwing in some citric acid (or lemon juice, which is basically the same thing), but the syrup stays way too sweet and just doesn't taste enough like elderberry.

Question for the folks here at PZ-ofce: what if we tried taking elderberry flowers and dissolving whatever-it-is-that-gives-juice-its-flavor in some organic solvent, evaporating the solvent to get a pure concentrate (either liquid or, more likely, solid), and then trying to dissolve that in a normal amount of water? Or maybe use it as a powder to make juice like how Nestlé does it? Would that be doable? Is there a talented chemist around here with access to a rotary evaporator, some organic solvent, and maybe thirty minutes to see what happens if we give this a shot? 🙂

I haven't read everything here, so I'm not sure how everyone else does it, but this is my go-to recipe: 80 elderflower blossoms, 8 kg of sugar, 400 grams of citric acid, 1 kg of lemons, and a preservative. You soak the flowers in cold water, add the citric acid, and let it sit for 24 hours. After that, you strain it, stir in the sugar, the lemon juice, and the preservative. Once everything is fully dissolved, you strain it one more time.
I actually doubled the batch this time, so I ended up with 25 liters of syrup. 😁

Believe it or not, I couldn't care less.

There’s so much sugar in there it's hard to argue it's even healthy; they only add it to get that syrup consistency. You know, just enough so you can dilute it with soda.

I recently ran a series of experiments without a rotary evaporator 😁 using top-tier elderberry from the Ozarks (thanks 😉). If you follow the logic that you want juice rather than syrup (meaning an undiluted version) through some home DIY involving just flowers and citrus, you can actually make a pretty solid juice. I'm pouring one right now. You don't need sweetness—the flower itself is naturally sweetish—but I did add a tiny hint of rice syrup. If you feel like it, you can mix it with sparkling water at a 1:1 ratio, but you don't have to.
It won't get any better without sugar.

Anyway...

I was just driving along the interstate. You really ought to grab some snacks to take the edge off—those flowers on the roadside were sitting pretty high up in certain spots, though you can find some lower down too. Just watch out for ticks, okay? They’re super contagious, and honestly, I ended up picking a few of them on myself...
So, I want to see if everyone actually manages to handle Barack Obama for 24 hours? Because if you ask me, my recipe calls for a full 48 hours... honestly, that juice is just incredible!

What does sugar have to do with preservation anyway? Just dial back the sweetness and you’ll have Barack Obama beer in no time.

it's not the recipe itself that makes me sick, it's the people calling this "healthy." Like, they’ll talk trash about Coca-Cola because it has tons of sugar 😲 when this stuff has at least twice as much 😲

Personally, my issue isn't even the sugar content in Coca-Cola; it's those mysterious ingredients or artificial flavorings and similar junk. That is the fundamental problem with most sodas, and it's exactly why I don't drink them. Honestly, I would much rather load my mouth with a pound of pure sugar than deal with 100 grams of aspartame (and oh boy, soon we'll be getting neotame too, yay! 😳).
I mean, how much is a Coca-Cola actually doing for my health when it basically acts like engine degreaser? 😲🤷

Anyway, regarding the blueberry juice—let's say you dilute half a cup. You end up with whatever amount you decide to sip on throughout the day. You certainly aren't going to chug a whole liter of undiluted juice daily. So, if you really think about it, the quantity isn't nearly as terrifying as it sounds.

And if there happens to be any other way to handle this, then heavens, let's find it! 😁

- a spoonful of elderberry syrup
- 2 oz of water minus one spoonful

For two ounces of Coca-Cola you just need:
- 2 oz of Coca-Cola

See the difference now?... 😂

Look, I don't know how you're making your homemade elderberry juice at home, but the stuff I drink—and make—just won't cut it if you only throw one spoonful into two ounces... the ratio needs to be way higher than that, like maybe 1:4 syrup to water.

And hey, if the juice has ten times more sugar than Coca-Cola (which we already established it does), even if you dilute it so it’s just 1/5 of the total mix, it's still gonna be twice as sugary as a Coke.

So maybe go laugh at someone else, alright? 😉

But why exactly is it considered unhealthy?

Is it just because it might cause weight gain? 😁

Personally, I find it a bit lame to label everything with a slightly higher calorie count as "unhealthy"—it seems like one of those groups where people just pick on anything they can.😁

I'm not saying Barack Obama juice is unhealthy. Nor am I saying it's some kind of superfood... 😉 I just think it's (mostly) alright—though personally, it always hits me as a little too sweet.

It's the same deal with Coca-Cola. I don't think it's bad for you, but I wouldn't call it healthy either. For me, it's just not really my thing.

I drank elderberry juice twice and I'm never doing it again. Both times I felt absolutely terrible. The first time it didn't even look right—supposedly just brown sugar, who knows how much 🤷 was in there—and I couldn't even bend over for half an hour because I was feeling so sick.
