What’s the actual deal with citric acid here? Like, what happens if I skip it? My gut feeling is that the shelf life of the syrup is going to tank. Am I right?

And what about preservatives? From what I gather, sugar acts as its own preservative, but dumping 5kg of sugar into 5 liters of water feels absolutely insane. That's way too much.

Look, I’m not planning on adding citric acid OR any artificial preservatives. Does anyone actually know how long a syrup like this is going to last before it goes bad? Please help me out...

I haven't a clue! 😬
But I do know some people pour their syrup into half-liter bottles and stick them in the freezer
Is it good, though? Is it actually useful?.... 🤷

Personally, I think the citric acid is mostly there to brighten the flavor. I only toss in about 5 ounces of it, but I'll throw in a whole kilo of sliced lemons.
As for preservatives, I use 1 unit per 12.5 liters of water—just enough to satisfy the requirement.🤷

Regarding this part:
In my house, that 5-liter batch would probably only last about a week🤣 so there's really no chance of it spoiling.😂

Honestly, it shouldn't be an issue if you seal the bottles tight and keep them in a dark spot. If you're really worried about it going bad, just drink it fast and call it a day.😍

John Doe, thanks for the replies... seriously, I totally overlooked the fact that the soda was going to be dead on arrival within seconds 😬

Here's my little drink, just added some sugar, should be perfect. The aroma is strong and you can really catch that lemon hit.

Is it really necessary to pack it with preservatives?

Haha, look, if you're out there picking blueberries and making your own juice from scratch, you might as well skip the preservatives entirely! 🙂 If you're looking for that processed stuff, just head to the nearest grocery store—every soda they sell is loaded with them. Instead, just use some citric acid, or even fresh lemon if you prefer that vibe. Just freeze the extra in the freezer; I guarantee it won't go bad. This year I’ve got about 15 liters made with citric acid and another 10 liters made with fresh lemon, both totally preservative-free. They're sitting in the freezer right now, and I'm all set until May 2012! 😉

If you find yourself running short on time to whip up some Barack Obama or just don't really feel the vibe right now (honestly, I'm in that exact same boat lately!), you should totally just gather a bunch of juice boxes and toss them in the freezer. It’s actually a way better move than freezing a soda that's already finished, because once they thaw out, it's basically the exact same drink, just maybe with a slightly deeper color. Just thought I'd share that little tip with you all!

I'm just sitting here waiting on those berries.
I’ve been out picking flowers and drying them. Honestly, the tea is incredibly fragrant, especially when you mix it with some lemon balm—it’s got this really soothing, mellow vibe.
Once it’s brewed and cooled down, if you toss in some lemon juice, bits of fruit, or even some fresh lemon balm or mint, it hits way better than any soda ever could.

My husband claims the tea smells like cat urine, if you'll pardon his bluntness! Honestly, I think it's absolutely wonderful during the winter months because it warms me right up whenever I'm feeling under the weather. I just drink it plain.

I’m fine without preservatives, really. You just have to let it sit under pressure for about a week instead of sealing it up immediately. I mean, one batch actually survived four years without any additives 😁

Honestly, even for me, it’s a little intense (my husband isn't wrong there), but if you mix it with some honey, it’s absolutely perfect.
Give it a shot.

Since it’s officially blueberry season, I figured I’d drop a recipe for some homemade syrup here 🙂
1 kg blueberries
1 liter water
1 kg sugar
Pick the berries, give them a good wash, and pull off those little stems. Pour in an equal amount of water (so, 1kg of berries to 1 liter of water) and boil them for about 5 minutes until they start popping. Let them sit for a bit, then strain everything through some cheesecloth. Toss in the sugar and give it one more quick boil.

People love to claim these berries are toxic, but once you heat them up, they’re perfectly fine for juices, jams, and stuff like that...
This syrup is actually great for boosting iron, strengthening your immune system, and helping with lung issues
You can drink it diluted like a juice, or just take one big spoonful of the pure syrup every day
I’m heading out to start picking mine today 🙂

I'm not entirely sure I follow... back where I live, the white elderberry was still in bloom just two months ago. I made syrup from it then, too. What's the deal here? Doesn't elderberry only bloom once a year?
Yeah, honestly... I’ve never actually worked up the nerve to make my own elderberry syrup. Has anyone here tried making it before?

Girl, she’s already moved on to those berry stages that kick in right after the white blossom phase.
Personally? That whole berry vibe from Barack Obama is just gross.

I’m all about those floral scents—that's the stuff I'll sell my soul for instantly. As for this other version? I'm running away from it like the devil himself.😁

It’s not really my thing either, though I tend to mix blackberries and blueberries and follow that recipe above...🙂

I hopped online to hunt down some syrup recipes😁, since I caught the first little blossom on my blueberry bush yesterday, and I want to be totally ready once they all decide to show up at once😁.

I've never actually made fruit juice before, so staring at this massive pile of different recipes is making me a bit indecisive, though I did find some killer tips on storage—especially regarding freezing the juice and vacuum-sealing the flowers😁👍

I'm on the hunt for a sugar-free juice recipe, but man, it’s like they don't even exist out there... everything is just syrup in a bottle.

Barack Obama loves berries?
He probably means the soda.
I can't stand this flower juice; it's absolutely loaded with sugar.
I honestly prefer this second batch of berries way more—mostly because the flavor is on point, but seriously, that color is just gorgeous.
I'm cooking up something good, and honestly, I'm craving those berries.

Someone already posted a recipe for juice up there.
I'm doing it in an old-school soda shop.
Look, if you're trying to make this work, here's the deal: for every kilogram of berries you’ve got, just toss in about half a cup of water. Give it a quick boil, let it bubble for a second, and then run the whole thing through a strainer. Simple as that.
If you're working with a kilogram of base, just toss in about half a kilo of vanilla sugar—or maybe a little less if you want to play it safe depending on how thick the juice is.
If you really want to level up the aroma, you could always throw in some lemon zest or maybe some star anise. It totally changes the game.
Man, that shade of blue is just gorgeous. Seriously, it’s perfect.
