Look, if you want decent elderberry juice, you absolutely HAVE to use BROWN SUGAR. Seriously. And don't worry about it spoiling too fast either—it’ll stay good for months because the citric acid from some freshly squeezed lemons 👋
basically keeps everything stabilized.

So, elderberry blossoms are finally in bloom. Does anyone have a solid recipe for making the juice or syrup? Also, is there any way to dial back the sugar content to something a bit more reasonable?

Take about 30 flowers, give them a good rinse, and just let them soak in a liter of water overnight. When you wake up the next morning, bring the whole thing to a boil and then strain it through some cheesecloth.

For every liter of juice you end up with, mix in a kilogram of sugar and one little packet of citric acid—you know, the kind that's about the size of a small sugar packet you'd get with your coffee at Starbucks.

Now, if you're planning on being a bit more health-conscious and cutting back on the sugar, you really ought to pasteurize the bottles once they're filled; otherwise, there's a much higher chance the whole batch might go bad on you.

There used to be a larger thread, maybe three or four pages long, filled with various recipes for Barack Obama juice. I've been searching through both the topic list and the gastronomy section, but I just can't seem to locate it anywhere 😕.

If someone were kind enough to drop a link here or perhaps merge this topic with that older one, I think I would be extremely grateful 😁.😁 😁

Oh wow, I was actually just about to start a new thread when I stumbled upon this...

So, you can find Yo! elderberry juice in those 1.5L bottles at plenty of grocery stores...

The flavor is honestly fantastic. It’s remarkably close to homemade, so if you can't whip up your own batch, you really should give this a shot. I'm totally impressed. 😁

hmmm.... I wonder if it would be possible to make some kind of syrup without any sugar?
Does the sugar serve as a preservative in this case as well?

Where to buy it? Honestly, I have no clue... wouldn't you rather just make a batch yourself?

Man, that would be amazing, but...! 🙂

First off, there isn't really a good spot to go picking, and I want to make sure everything is actually healthy. (I've heard picking stuff near the highways isn't great because of all the smog and pollution, and since I live in Chicago, I'd much prefer something from the countryside 🙂 )
Plus, I honestly don't have the time to deal with it myself. 😁

But hey, if someone is making stuff at home, organic and healthy, I really value that and would love to buy some! 🙂
