Best software for streaming and screen recording?

I am looking for a straightforward piece of software capable of recording a video stream I'm watching online.
Essentially, I’m talking about content that doesn't have a native "save" option—just something playing on my screen that I could capture and save in a standard video format.
Additionally, I was wondering if there is a program that functions similarly but allows for more comprehensive screen recording—for instance, where I hit record and it captures everything happening on the display, including mouse movements and other interactions... something that would result in a polished tutorial style video.

Thanks.

Basically, anything that can't be downloaded directly, I want to record and save as a standard video file.
Also, does anyone know of a program that does the same thing but functions more like a screen recorder? Something where I hit record and it captures everything happening on my monitor—mouse movements, etc.—to make it look like a tutorial...

Thanks.
