Every time I launch a game, it loads for a second and then my whole computer just restarts.

It’s possible the GPU drivers are the culprit. Try swapping them out and you'll see if the behavior changes.

Which game are you playing, and how beefy is your rig?
Drop those specs, man.

Kernel Panic: THREAD_STUCK_IN_DEVICE_DRIVER_M

A Kernel Panic with the error code 0x100000EA essentially means a thread within a device driver has entered an infinite loop. It’s just stuck there, spinning its wheels indefinitely.

I finally got my graphics drivers installed, so I can actually launch the game now—which is a win! But there's a catch: the textures are loading incredibly slowly. Like, I'll walk into a room and just have to sit there for a few seconds waiting for the walls, the bed, or the floor to actually show up.
If anyone has any ideas, please help a person out.
Here is what I'm running:

Intel Pentium(tm)64 x2 Dual Core Processor 5000+ 2.61 GHz
5.00 GB RAM
64-bit OS, macOS
And an NVIDIA GeForce GT 240 graphics card
I've got plenty of free space on my hard drive.

Where on earth did you find 5 GB of RAM? And honestly, I'm more curious about which game you're actually trying to run, since you mentioned everything else except that part.

Out of all my installed games, only the Full Ride Scholarship is acting up.
