Look, you already took the first step. You're actually looking into this stuff. Now you just need the second step—you gotta somehow find the time to prep.
Salads are fine, sure, but the body needs warm food too (even if it’s summer). So, you should probably be eating soups and stews. And vegetables... right now is the perfect time for fresh produce; Farmers Markets are loaded with it. Since you're short on time, I suggest buying it all, cleaning it, chopping it, and keeping it in Tupperware a day early so you can just whip things together the next day. When I was swamped, I used to even prep stuff ahead of time, like cooking greens, cooling them down, and tossing them in the fridge. Then the next day, you just boil some potatoes and mix it with the greens, some garlic, salt, pepper, and olive oil or butter (which I assume you use). Fish... river or sea fish, however you cook it—that's a good move. Meat... I wouldn't stick just to chicken. You need variety. It's more interesting, and honestly healthier since you aren't pumping so many toxins into your system. Yeah, toxins—I'm not wrong there. Nowadays, it's hard to find (especially in smaller towns) anyone growing veggies without using artificial crap, whether we like it or not, we're basically forced to eat poison. Anyway...
Fruit—the more, the better... Water—you know how it is, when you don't drink enough, you get headaches, joint pain... you're just depleted. One of my coworkers used to complain about headaches constantly and blamed it on crappy face creams. Like, nothing worked... until she realized she just wasn't drinking enough water...
And... I won't ramble... just make sure you don't skip meals and don't eat "on the run." Try to relax (as much as you can), sit down, and eat slowly. That's just as important as what you're eating and how it's cooked.
If you haven't started yet, start using olive oil, apple cider vinegar, spices—not just because they make things taste better, but because they're healthy.
