Here’s how you can whip up your own homemade protein bars, because let’s be honest, buying them pre-made is a total rip-off—they can easily run you $3 or $4 a piece if you aren't careful.

What you'll need:
2 scoops of rolled oats (about 160 grams)
4 scoops of protein powder (roughly 120 grams)
5 tablespoons of peanut butter (around 80 grams)
1/2 cup of milk

This makes 8 bars.

Per bar:
200 calories
7g fat
18g carbs
17g protein

Paleo Plum and Nectarine Crumble

What you'll need:

4 cups sliced fruit — plums and nectarines work great
1/2 tsp cinnamon

For the topping:

1 cup almond flour
3 tbsp coconut flour
1 tbsp ground flaxseed
4 tbsp coconut oil
cinnamon to taste (about 1/2 tsp)
a pinch of salt
1/4 tsp stevia or 2 tbsp honey *

Grab a baking dish and lightly grease the bottom with a tiny bit of water. Toss in your cleaned, sliced plums and nectarines. Sprinkle them with a little cinnamon and pop them into an oven preheated to 350°F for about 30 minutes. Pro tip: if your fruit is on the tart side, mix it with 2 tablespoons of honey before you start baking.

Mix together the almond flour, coconut flour, flaxseed, coconut oil, cinnamon, and stevia. *Just a heads up, my stevia is pretty intense, so 1/4 teaspoon is plenty for me, but feel free to use whatever sweetener you like—just aim for the amount that would normally replace about 1/2 cup of sugar.

Pull the fruit out of the oven, sprinkle that nutty mixture all over the top, and bake for another 20 minutes or so. If you're feeling fancy, garnish it with some fresh raw fruit before serving. Enjoy!

I actually mentioned in that other thread about dairy-free cheese that Kladavčanka is my absolute go-to! 😍
It’s got about 80 calories per 100g, with 1.8% milk fat and 10% dry matter content.

One way I love using it is this version right here—just lightly pan-seared until it's perfect.

All you really need is a grill or a good non-stick skillet, one tiny teaspoon of fat (coconut oil is ideal, but olive oil works just fine!), and some Kladavčanka sliced into pieces about 1cm thick.

Just fry the slices quickly on both sides until they turn a beautiful golden color. Serve it up with whatever side dish you're craving!

Blueberry Marble Cake

What you'll need:

7 oz dark chocolate (look for 70% cocoa)
3 eggs
1/2 tsp baking powder

5 fl oz Greek yogurt
3.5 oz whipped cream cheese
A pinch of stevia (or whatever sweetener you use to replace 4 tbsp of sugar)
1 egg

4.5 oz blueberries

Melt your chocolate using a double boiler. Once it cools down just a bit, whisk in your beaten eggs. Just be careful not to let the chocolate get too hot when you mix them in! Stir in the baking powder, then pour everything into a 9-inch cake pan lined with parchment paper.

Preheat your oven to 320°F.

Mix the Greek yogurt and cream cheese together, then stir in the egg and stevia. Give it a quick whisk until it's smooth.

Spread that creamy mixture over the chocolate batter in the pan, then swirl it around with a fork to get those marble patterns. Scatter the blueberries on top and bake at 320°F for about 50 minutes.
If you can't find blueberries, raspberries work great too!

No-sugar oven-baked plum jam

Grab about 4.5 pounds of plums (something sweet like Black Splendor works great) and get a deep baking pan ready—I’m talking about three inches deep.

Give those plums a good wash, pat them dry, pit them, and toss them into a covered baking dish. Pop that into the oven at 320°F. If you don't have a lid handy, just throw some aluminum foil over the top.

Let them hang out for about 2 hours, then lift the lid and give everything a stir. This is where you can get creative—throw in some vanilla, a splash of rum, dark chocolate chips, or maybe some cinnamon if that's your vibe. Bake it for another hour or two, depending on how much moisture has evaporated and how thick you want your jam to be.

While it's still hot, pour it straight into preheated mason jars.

Oatmeal Pancakes with Protein Chocolate Filling

The Pancakes:

60g oat flour—you can just pulse some oats in a coffee grinder until they're fine (or even just use whole grain flour if you prefer)
100ml milk at 1.5% fat (though honestly, feel free to swap this for oat milk, almond milk, whatever you have on hand!)
1 egg
A tiny pinch of salt

Just mix everything together and cook them up! I ended up getting about 4 pancakes from this batch.
Each one clocks in at around 90 kcal.

The Filling:

20g protein powder—I used a chocolate chip cookie flavor, but chocolate works perfectly too
20g dark chocolate (I went with 74% cocoa)
A splash of milk and water to thin things out

Whisk the protein powder with the liquid until it turns into a thick, luscious cream. Melt the chocolate (the microwave is easiest!) and fold it into the protein mixture. If it feels too thick, just add a little more liquid until it reaches the consistency you want.

With this filling included, each pancake comes out to roughly 140kcal, 12g Carbs, 6g Fat, and 9g Protein.

A little pork stir-fry for a change🙂
About 1 lb pork shoulder
1 onion
2 bell peppers
1 carrot
A handful of corn
Soy sauce
Garlic
Salt
Pepper
First, marinate the meat in soy sauce. Toss all the ingredients into a wok with a light coating of oil. Near the end, throw in the corn and season everything with garlic, salt, and pepper.

What colors 🙏

The other day I was busy baking fat-free crackers. Honestly, you can play around with different flour blends and ratios however you want—it’s all very flexible!

Here is what I used:

1 cup (160g) cornmeal
1 cup (120g) oat flour (either ground oats or store-bought)
1 cup (100g) buckwheat flour (again, either ground or pre-made)
1 tbsp (15g) sesame seeds
2 tbsp (30g) ground flaxseeds
1/2 packet (7g) baking powder
about 1.7 cups water
your choice of seasonings: salt, pepper, nutmeg, cumin...

Just mix all those dry ingredients together and slowly pour in enough water to bind everything. You want it thick enough to actually handle on the baking sheet, right?
Spread the mixture out onto a pan and press it down firmly. Make sure to slice them into your desired shapes immediately while they're still wet; trust me, they’ll be much easier to break apart once they're finished baking.

Pop them into a preheated oven at 320-340°F for about 25 minutes, or just until they turn a light golden color. They are absolutely amazing for dipping into various spreads (I tried mine with hummus and it was a total hit!).

By cutting them this way, I ended up with 36 pieces. Each individual cracker has 44kcal, 8g net carbs, 1g fat, and 1g protein.

Baked Baby Spinach with Bacon and Mushrooms:

Grab a tablespoon of olive oil and sauté some finely chopped onion (about 1.5 oz) until it smells amazing. Toss in some diced bacon (roughly 1.2 oz) and let it sizzle for a bit before throwing in your sliced mushrooms (around 5 oz).
Keep cooking everything until those mushrooms get a beautiful golden-brown color, then dump in the baby spinach (about 7 oz) and stir it all together until it wilts down perfectly.
Hit it with a bit of salt and pepper.
Transfer the whole mix into a small ceramic baking dish, crack an egg right on top, and slide it into a 400°F oven for about 10 minutes.

Fat: 40g
Protein: 20g

These Sheevin crackers would be absolutely killer with this! 😬

Tropical Pumpkin Soup

What you'll need:

1 medium tropical pumpkin (mine was about 1.3 lbs)
4 garlic cloves
2 hot peppers
olive oil
vegetable broth or water
salt

Give that tropical pumpkin a good wash, slice it in half, and scoop out the seeds. Honestly, don't even bother peeling it—just trim off any bruised spots if you see them!

Dice up the pumpkin and toss it into a soup pot with a splash of olive oil. Add a little water and let it simmer for about 10 minutes. While that's happening, chop up your garlic and peppers, throw them in the pot, and pour in enough vegetable broth to cover everything. Let it cook until the pumpkin is nice and soft, then just blitz it all with an immersion blender. If it looks too thick, just add a bit more water and don't forget the salt.

about 2 oz black olives
2 tablespoons olive oil
seasonings: salt, pepper, and an herb blend

Nutritional info per stick:
58 kcal, 9g carbs, 1g protein, 2g fat

First, just toss all your dry ingredients together with those finely chopped black olives, then stir in the water and oil and knead it into a dough.

Then, slice everything into even pieces and roll them out by hand into sticks. Lay them on some parchment paper and pop them into a preheated oven at 350°F for about 15 to 20 minutes. Oh, and make sure to flip them halfway through—around the 7 or 10-minute mark—so they get nice and crispy on both sides!

Whole Wheat Zucchini & Goat Cheese Pizza:

First up, mix your dough (whole wheat flour 200g, half a small packet of dry yeast, a teaspoon of salt, plus water until it feels right) and let it rise for at least 30 minutes. Once it’s puffed up, knead it again, roll it out super thin, and pop it into a baking pan (a round one works best!).

Spread chopped tomatoes mixed with basil and oregano over the base, then layer on some deluxe turkey ham—just one standard 100g pack
should do it!
Next, grate two small zucchinis and mix them together with goat cheese (about 130 grams), then spread that yummy mixture all over the pizza.
Top it off with about ten pitted olives.
Sprinkle on some extra oregano and bake at 410°F for 25 minutes.

Time for something sweet...

Banana Muffins

What you'll need:

- about 3.5 oz banana
- 1 oz whey protein (I went with chocolate)
- 1.7 oz low-fat cottage cheese
- one egg
- about 1/4 oz baking powder

How to make them:

Just mix everything together—mash the banana with a blender if you can... then pour it into your muffin tin. I actually stuffed mine with some Sheevin coconut milk and vanilla cream, which is honestly amazing.

I think I’ve already posted a recipe for pepper stuffing here—the version without rice in the meat and sitting in a plain tomato sauce. But honestly, after a while, I got tired of the filling being too dense and the sauce feeling way too thin. I wanted that specific "comfort food" vibe—you know, soft filling and a thick, rich gravy—but without using rice or making a traditional flour roux. Well, I finally cracked the code.

Carrot and Oat Stuffed Peppers

What you'll need:
300g ground beef (chuck works best)
1 medium to large carrot
Two small onions
2 medium eggs
1-2 cloves garlic
About ten small bell peppers (the light green, rounder ones)
2-3 tablespoons rolled oats (or wheat bran)
Half a liter of tomato juice (the carton kind)
A can of whole peeled tomatoes or diced tomatoes
Salt, pepper, stevia, Maggi (if you're into that), sweet paprika, and herbs (I used a Mediterranean blend, but parsley—especially fresh—is great)

Instructions:
Grab a big pot, crank the heat to high, and pour in the tomato juice along with the canned tomatoes (give them a quick chop first if they're whole). Add a splash of water, some salt, and about half a serving of stevia—that helps cut through the acidity of the tomatoes. Bring it to a boil.

While the sauce is heating up, finely mince the carrot, garlic, and onion. Pro tip: just throw them in a food processor to get them super fine. The carrot is the secret weapon here—it’s what makes the meat tender. Toss those veggies into a bowl, crack in the two eggs, and season everything with paprika, herbs, pepper, and salt (or Maggi). Then, add the ground beef and mix it all together by hand until it's well combined. I usually lick my finger just to check the seasoning levels.

Cut the tops off the peppers and scoop out the seeds and that white pithy stuff inside. Use a spoon to fill them with the meat, carrot, and onion mixture, but don't overfill them or pack them too tight against the sides—they’re going to swell up once they start cooking. Drop the stuffed peppers into the boiling tomato sauce. Usually, I eat these with boiled potatoes, sweet potatoes, or cauliflower, but today I paired them with oat fritters.

For the fritters, I just whisk one egg with a pinch of salt and stir in a few spoonfuls of oats. Use a spoon to drop the mixture onto a heated non-stick pan with a few drops of olive oil and shape them into small patties. Turn the heat to medium and cook for a few minutes on each side.

Whole Wheat Potato Buns

I ended up with 13 buns, so here is the breakdown per bun:

What you'll need:

240 g whole wheat flour
150 g mashed potatoes (just smooth boiled potatoes with a tiny bit of butter added)
50 ml milk
50 g yogurt (or maybe some low-fat cottage cheese)
7g yeast and a teaspoon of baking powder
1 egg
seasonings to taste: salt, pepper...
for topping and glazing: an egg wash and seeds

First, mix your dry and wet ingredients separately before combining them to form the dough. You might need to add a little extra flour depending on how much moisture you have going on! Once it's mixed, cover it up and let it rise in a warm spot for about 40 minutes.

Roll the dough out on a floured surface until it's about 1 cm thick, then cut out whatever shapes you fancy. Lay them out on a baking sheet lined with parchment paper. Brush the tops with your beaten egg and sprinkle on those seeds however you like.

Pop them into an oven preheated to 120 degrees Fahrenheit for about 5-10 minutes, then crank the heat up to 340 degrees and bake for another ten minutes or so, just until they turn a lovely golden color. Honestly, though, timing can be so tricky since every oven behaves differently!

So, I whipped up some Sheevin scones today! 😍 And to go with them, I made this killer chicken spread:

The recipe for the scones is right above, but here’s how you make the spread (this makes enough for two people):

15g mayo
1 garlic clove
50g low-fat cottage cheese
40g goat cheese
15ml soy sauce
25g onion
10g mustard
100g chicken (grilled on a dry pan, no oil needed!)

Just toss the chicken, onion, and garlic into a blender or use an immersion blender to get it super fine, then mix that right into the rest of the ingredients.
Give everything a good stir, add salt and pepper however you like, top it with some chives for looks, and let it chill in the fridge for at least an hour.

Seriously, spread this on those warm scones while they're still hot. It's amazing. 🙂

Nutrition info per 100 grams (about half of what I made):

Quick 10-Minute Mediterranean Anchovies

Ingredients for 2-3 servings:

600 g fresh anchovies
olive oil
lemon
salt

First, you’ll want to clean the heads and guts out of the anchovies—honestly, the head usually just pulls right out with everything else, so it makes the prep work a breeze! Just make sure to scale them too. Lay them all out on a sheet of aluminum foil that you've lightly brushed with olive oil. Sprinkle them with salt, give them a good squeeze of lemon juice, another drizzle of olive oil, and tuck a few lemon slices in there with them. Pretty simple, right?

Cover the tray with more foil and pop it into the oven at 350°F for about 10 minutes.

Veggie & Millet Casserole

Ingredients for 4 servings:

1 cup (approx. 4.5 oz) millet
14 oz zucchini
14 oz canned crushed tomatoes
2 red bell peppers
1 leek
1/2 onion
1 tbsp olive oil

Per serving, roughly:
200 kcal
36g Carbs
4g Fat
6g Protein

So, here’s the deal with the millet: you just boil it for about 5 minutes in roughly 1 ¼ cups of boiling water, then take it off the heat and let it sit so it can soak up all that goodness. While that’s happening, grab a pan, heat up a little olive oil, and toss in your chopped veggies (just skip the zucchini for now!). Season it however you like—don't be shy! Once the veggies have softened up, stir in those crushed tomatoes and your cooked millet. Let everything simmer together for a bit, giving it an occasional stir to make sure it's all coming together perfectly.

Preheat your oven to 350°F. Take a greased baking dish and start layering: a layer of sliced zucchini rounds, then a layer of that veggie and millet mixture, and keep repeating until you're done. Top the whole thing off with more zucchini slices, drizzle a little extra tomato sauce over the top, and sprinkle on some oregano. Pop it in the oven for about 30 minutes, or until the top looks beautifully golden and toasted. Oh! If you want to switch things up, you could actually use a little egg beaten with milk instead of the tomato sauce for the topping. Just make sure to let it cool down for a minute before slicing, otherwise, it might fall apart on you! 🙂
Serve this alongside a nice piece of meat.

I really loved what I had for breakfast this morning:

Sugar-free and eggless Amaranth pancakes

Here’s what you’ll need:

- 2 oz whole grain flour (I actually did a half-and-half mix of whole wheat and rice flour)
- 5 oz milk (I went with a soy and coconut blend, but regular milk works just fine too)
- sweetener of choice (I used honey)
- two tablespoons of baking powder
- a pinch of salt
- lemon zest, cinnamon, vanilla... whatever you're feeling
- 1 oz amaranth

The prep is pretty straightforward and easy... typical quick breakfast stuff. 😁

I ended up making some (mini) pancakes this morning. 😁
They’re made from just two ingredients: a couple of bananas and two eggs.

For a topping, I melted a square of dark chocolate into a splash of milk and stirred in some whey protein.

Honestly, they're delicious—they just melt in your mouth. 😍
