Need help with my PC build, please advise!

Alright guys, I’ve been sitting on the fence about buying a new rig for ages. Mostly looking to game, run Adobe Photoshop, and maybe do some light video editing on the side. I finally decided to pull the trigger and actually invest some cash. My current setup is an 8-year-old relic, and while it somehow still manages to boot up some newer titles, it’s definitely struggling. I’m hoping this new build will at least come close to keeping up with my old 😛! For the foundation, I’ve settled on this motherboard:
ASUS Prime H270 gaming ATX Motherboard. For the GPU, I’m leaning towards:
EVGA Nvidia GTX 1080 8 GB FTW3 OC
Now, I need some real advice regarding the CPU. Is it actually worth dropping the extra cash for:
Intel Core i7 8700 Coffee Lake desktop Processor, or is there something just as solid that won't break the bank? Also, if there’s a cheaper motherboard or graphics card in this same tier, please let me know... Do I even need a processor this beefy? What’s the best "budget" option that won't bottleneck the 1080?
To round it out, I’m thinking of grabbing some Corsair Vengeance LPX 16GB 3000MHz DDR4 RAM, but here's another question: is 3000MHz the sweet spot, or should I go lower or higher? I'll probably start with 16 GB and then just grab another stick down the road when I have the money... 🙂

Everything you laid out there—go for it. You explicitly mentioned this is what you'll need for the next 8GB.

Coffee Lake won't work on an H270 or any other 200-series chipset.

Your best bet is grabbing a Z370 board paired with an i5 8400
Or go the Ryzen 5 1600 route with a B350 or X370 board.

If you're looking for something to last you 8 years, then sure, nothing is "too much." But honestly? I think it's overkill. Better to just save your cash now.
