Arthur Ramirez4 said:Hey, I’ve been scrolling through your feed and noticed you have an absolutely massive collection of photos featuring these huge, elaborate wedding cakes, which looks incredible, but it actually got me wondering if you might happen to have any shots of smaller, more intimate cakes? Like, maybe just one or two tiers? I’m planning this tiny, low-key wedding and I’m really leaning towards something more understated, and honestly, I haven't been able to find the exact style I'm dreaming of anywhere else online. So, if you do have some pictures of those smaller designs lying around and you wouldn't mind sharing them, I would be so incredibly grateful!😘

Some of these look a bit extra to me, but you can totally simplify them. Just like those other cakes I sent earlier, you could just do one or two tiers and still keep the main vibe. Hope that helps even a little.😘

Ronald Hill3 said:Sure, that would be great. Please send those details over via PM. 😘 I haven't actually ordered the cake yet (they told me it was still a bit too early), but I'm thinking about getting it from Graber (I think I posted a photo of it somewhere in this thread). Honestly, I've always been more than happy with both the taste and the look of the cakes I've gotten there (though maybe I shouldn't get too carried away right before my own wedding 😬 ), and it's easily my favorite spot. As for the small pastries, I haven't made up my mind yet—I suspect Graber might be a little outside my budget. 😳
I'm going to go dig through your old posts about Topolovec now... 😘

I really, truly hope they don't mess up your cake. I tried one of their cakes just once, a few weeks ago at a birthday party, and man... it looked stunning on the outside, but the second they started slicing into it, all that beauty vanished. The sponge was overbaked—almost burnt, honestly—the frosting was something I could have easily whipped up better myself at home, and it was so dry you practically needed a knife and fork just to manage a bite...
Really hoping you have better luck than I did...

I'll send those Topolovac details over to your inbox right now!

Has anyone ever come across a cake or dessert called 'Japanese Wind'? I am trying to figure out if this is just some quirky creation from my local bakery or if it is an actual thing 😕 It tastes absolutely incredible, and I am considering using something similar for a multi-tiered wedding cake 👍 To me, the flavor profile is remarkably similar to a Kinder Maxi King 🙂

If there truly is a recipe out there, I would certainly love to get my hands on it myself.😍

I am quite familiar with things like Japanese cheesecake or those frozen treats you find at Dairy Queen... but this "Japanese Wind" thing? I haven't the slightest clue what that could be. It sounds like something they might have just dreamt up on the spot... do you really want to go chasing after it?🙂

I recently placed an order for some baked goods through my mother, who does catering for one of my colleagues at work. I managed to find a photo of the exact cake I have my heart set on, but since I am completely clueless when it comes to pastry design, I wasn't quite sure if I should post the image here 😬 Regardless of what anyone might think about the style, I am looking for a classic Ticino cake, accented with a delicate pink ribbon and champagne-colored roses. My mother mentioned she could certainly handle it. She actually bakes for various local fundraisers and events, and I had the pleasure of trying her work when she made a birthday cake for my colleague's son. They were truly exquisite...

A colleague mentioned that his mother used to make a 'the wind from the east' cake for his birthdays. From what I recall, it doesn't quite taste like a Maxi King, but it is absolutely delicious—very light and refreshing. Because of that, I think I will choose it for one of my cake layers. I actually have a recipe for it in one of my cookbooks, so if you would like it, I can send it over via email. Just send me a private message 😘

I certainly wouldn't be making a cake for them 🙄 which is why I am asking if it is a known thing... if it isn't, I'd rather not get my hopes up.
But if you ever find yourself visiting the States, we simply must go grab some Japanese sponge cake. Or perhaps an even bigger "Japanese hurricane!" 😬

storm storm 😂

And if they can't even provide a decent slice of cake for you, why on earth would you bother going there in the first place?

I simply wouldn't dare... I have absolutely no clue how they craft their cakes, and since they're still the new kids on the block, 🙄 I just don't want to end up image

Hey Blondie, I need a lead on a good bakery. I’ve got all the cookies and pastries covered, but when it comes to actual cakes? Not helping me one bit. image

That shouldn't be an issue at all. I will send you a number tomorrow after I get off work, provided my boss doesn't fire me first for spending too much time on these forums...🙂

Got a recipe here from a girl over in the USA (hope I’m allowed to post this, if not, just delete me already)

The American Wind
YOU'LL NEED:
Sponge:
8 egg whites
10 oz powdered sugar
3 tbsp white vinegar

Filling:
8 egg yolks
5 tbsp sugar
3 tbsp all-purpose flour
1/2 cup milk
25 oz walnuts
25 oz margarine

HOW TO MAKE IT:
Sponge: Whip those egg whites into a super stiff meringue, adding the powdered sugar bit by bit, then stir in the vinegar one spoonful at a time until it's all mixed well. Split the batter into three parts (aim for about 10 or 11 tablespoons per layer). Bake each layer separately in a greased cake pan lined with parchment paper. Throw them in the oven for an hour at 300°F. Filling: Whisk the yolks with the sugar and flour, then cook that mixture down in the milk. Once it cools off, fold in the walnuts and some creamed margarine. Then whip in 4 containers of whipped cream—maybe toss in some Cream Fix if you want the topping to stay extra stiff. Assembly: Layer the sponge, then the cream, then the whipped cream, and just keep repeating that pattern. For the final layer, smother the top with whatever cream and whipped cream you have left over.

🙄 That sounds quite similar 👍 I will definitely give it a try!

Thank you, Ashley and Sanja!

I definitely know it! My aunt used to make it for birthday parties back in the day, though it's been ages since I last had a slice, so the memory isn't quite as sharp as it once was... 😳

I wonder if they would actually consider crafting a wind turbine out of snow for me at Disney World! 😬

Now, where on earth is this bakery located? I should probably head over there myself to see if those cookies actually live up to the hype image
