So, I've been thinking about starting a once-a-week fast, maybe on Saturdays.
It’s not really a religious thing for me, just more about health... (and no, before anyone asks, it’s not some trendy diet craze).

Anyway, I wanted to get some expert takes—or just hear from people who have actually done this—on how I should structure it. Like, I'd basically be sticking to just water for the day...

What should I be looking out for? Anything specific I should take alongside it? Just... yeah, any advice helps.

That sounds like a solid choice. But you did mention that health issues are driving this decision.
It might be helpful to be specific about what kind of health stuff we're talking about (I’m sure it’s nothing too crazy), because if it is, you could honestly just stick to water for that one day a week.
You really have to listen to what your body is telling you. Supplements like vitamins or minerals aren't strictly necessary if you're just fasting one day, though you can take them if you want. Still, I gotta ask again:

My husband fasts three or four days a week 😲(he's got his own reasons, of course)🙄

You’ll be just fine that day if you stick to water—I mean, why bother with anything else?
I honestly think there's some merit in giving your system a little reset every once in a while. 👍

Every year during Lent—specifically from Ash Wednesday through Easter—I cut out meat entirely. It's for religious reasons, sure, but also for my health. During those forty-odd days, I feel incredibly Q... and once I slowly start eating meat again, the difference is massive.
And despite what some people might claim, I won't be told that eating meat all the time is a good idea.

Anyway, that’s not strictly about fasting, but still...
Consider this a little bit of moral support for what you're doing. It isn't a bad habit; honestly, more people should probably do it. Food just isn't what it used to be...😁 Everything is overprocessed, too fatty, and obviously way too heavy on the meat. If you look back even ten or twenty years, meat was mostly a Sunday thing, and people were generally healthier... Nowadays, it's every single day and loaded with fat. It keeps going like that until a health issue pops up... and by then, it's often too late.
