Alright, let’s talk about making custard... since I claimed I could whip it up. Honestly, you're already halfway to failure if you don't have the right gear. You need a specific kind of heavy pot—think something like a Le Creuset Dutch oven—but it absolutely has to have a tight-fitting lid. I actually own two: one for a small batch using a pint of milk, and one for a full quart. For the quart version, grab 6 eggs, 6 tablespoons of sugar, a dash of vanilla, and some lemon zest... nothing else, though a splash of rum wouldn't hurt. For that caramelized glaze, just hit it with 6 tablespoons of sugar... pour it into the pot so it covers the bottom evenly, then pour in the mixture. And make sure you SEAL that lid. SEAL IT. Now, why should anyone bother hunting down this specific pot? Because you’re going to be using a bain-marie setup, sitting the pot in a larger vessel filled halfway with water—maybe a bit more. You come to the forum, act all sophisticated, while the custard simmers away. You can't mess this up, but it takes patience; it might take 50 minutes, it might take an hour, maybe even an hour and five... just make sure you don't let the water boil dry. Basically, the right pot and this forum are the real secrets to perfect custard. As for a photo of the pot or the finished product, you're out of luck because I haven't figured out how to upload images yet...

Yeah, I know how to drop a link... though the one I’ve got at home is a Dr. Oetker pan, so it has those little side tabs to help seal everything better, but this one looks alright too...

So, I was wondering—is anyone actually cooking anything tonight?

Just spread some high-end raspberry jam on a Belgian waffle and paired it with a hot cup of black tea.

It’s so good I can practically feel my heart rate picking up.

Well... I picked up some fresh raspberries yesterday, but I’m strictly forbidden from touching them until my kid gets home. Honestly—if I even start snacking, there won't be a single one left by the end of the hour. 🙂

It’s not quite a powerhouse, but it certainly packs a punch.

I truly don't believe a recipe is necessary here. 😁

Breakfast is officially out of the way

I just pulled some chicken drumsticks out of the oven, so I’ll probably whip up some version of a classic American casserole later on.

This looks quite impressive. I am currently working on a similar little project myself—though I tend to incorporate olives and capers, served alongside a side of polenta.

You just throw in whatever you like and whatever you’ve got on hand.
Whether you’re craving some hearty stew, a rich pasta dish, or homemade gnocchi... it really just comes down to what you're in the mood for, doesn't it? Everyone has their own go-to comfort food.

Where exactly are we talking about? Is that somewhere near me?🤣

Sal, I have no idea what world you're living in. The plains are part of the 9th congressional district. 😁

It could be grits, polenta, gnocchi... really, whatever suits your taste.

Where is this place? Is it anywhere near me?🤣

Yeah, sounds like a great meal—quick and delicious. 🙂

San Diego County, though I guess anyone could figure out where you're based just by looking at your handle.😁

The beer will chill and be gone by the time I finally show up.🤣

I am honestly counting down the days until summer and plum season arrives.

My homemade plum dumplings.
