A single quote only uses one code. The code is what’s inside those brackets—it's split into two parts, one before the text and one after.
There are basically three ways to do this:
1. A plain quote without a name—the code looks like [ quote]. To make sure it displays correctly, just remove the space I put between the first bracket and the word
quote. That gives you this:

2. A quote with a name, but without referencing a specific post—the code is [ quote=Nicholas Williams7]. Again, to get it right, you have to ditch the space between the first bracket and the word
quote. Here’s how that looks:

And 3.—what you’ve been struggling with... the one that just won't click—is a quote with both a name and a post reference. The code is [ quote=Nicholas Williams7;post number]. Just remember to kill that space between the first bracket and the word
quote. This is what it looks like (using your last post as an example):

You need one code for every segment you want to quote. One quote, one code... simple as that.
