My persistence finally paid off. After months of endless negotiations and basically treating every bakery in the state like a holy pilgrimage site, I finally tracked down a pastry chef who actually listens to my vision for the wedding cake. It’s going to be a massive four-tier masterpiece—stacked directly on top of each other, not those flimsy little stands—and smothered in white chocolate. Honestly, when I asked her how she was even going to pull off a white chocolate finish without it failing, everyone else I talked to just gave me blank stares... but she? She just looked at me and said, "Don't you worry about that—it's my job to make sure this thing stays structurally sound and easy to slice."
If only every vendor in this country took their jobs half as seriously as she does.

Wonderful. Perhaps mine with the dark chocolate coating will actually turn out right this time.🙄

Honestly, I don't really care if it crumbles when I slice it. As long as it looks good and holds up in the heat, we're golden. I mean, even my regular homemade brownies fall apart sometimes and won't slice clean, but who cares? The point is that it tastes incredible. 😁

I’ve hit up nearly every bakery in town. I told them straight up that I wanted the cake decorated with fondant, and not one single pastry chef even tried to push back... they all just nodded along. But here's the catch: every single one warned me that the servers hate working with it. Apparently, they end up scraping it off because it makes slicing the cake a total nightmare. Now I’m leaning toward whipped cream instead. Honestly, it might be better anyway—it opens the door for lighter fruit flavors or a parfait style.

If any of you ladies actually know your way around this stuff, please weigh in. I could use the help. 😘

Mary, here’s my cake disaster: I ordered through a restaurant, and the event coordinator and I just weren't on the same page. Instead of the buttercream cake I actually wanted, I ended up with whipped cream...😍 That said, it looked great. The frosting was smooth, they kept it perfectly chilled in the walk-in, and honestly? It tasted amazing. Just like you said—out of the four tiers, three were parfait style: chocolate, vanilla, and fruit, with the Black Forest sitting right at the bottom...
So, even though I usually avoid whipped cream like the plague, it actually turned out fine. Maybe it didn't have that grand, structured look a buttercream cake gives you, but everything doesn't need to be perfect down to the millimeter...😛

Thanks, Mila. Glad you had something positive to say and that you ended up actually liking your cake after all. Where did you end up ordering it from?

Ladies, just leave your comments, and by all means, feel free to drop some bakery recommendations. I personally liked that little cupcake shop, and there’s also a lady over on the West Side who does great work.

Haha, I am right there with you on that one. 🤣 🤣 🤣
I really don't care about the structural integrity during the cutting process. White chocolate is just divine on a cake—I've tested that theory several times now—so it’s super important to me that my guests get to experience that same level of bliss. I actually ordered a slightly larger cake, so the servers should be able to cut thicker slices without any drama.
It's filled with chocolate cream and cherries. I think it's going to be amazing.

shadowbadger13, so what kind of filling are you going with for yours??

No clue, haven't even thought about it yet. I'll figure it out when I go to the meeting for the dessert selection. I'll just ask for recommendations since I'm not really a huge sweets person myself. To be honest, I don't care much about the filling... but I'll probably go with something light and easy to eat. 😁

It was from Vincek.

I simply wanted to share that I recently attempted a cake featuring a chocolate parfait, and I must say, it was absolutely divine 🙂 so much so that the crowning glory of our little dessert is no longer a Black Forest style, but rather a parfait—though, I suppose, a fruit parfait at that 🙂

Ugh, you're making me hungry! I've got this amazing strawberry cake sitting right here in my fridge. Now the real question is: the forum or the cake? 🙄

I've decided to go with Emma for the cookies and the cake. Before I head over there to put down a deposit, I'd love to hear your thoughts, advice, or any feedback you might have!! Thanks

northernhawk87: My cake was basically a parfait too... I mean, it was all inside little containers... but definitely a parfait...

🙂 I find myself quite perplexed as to why we don't have even a single floor dedicated to a parfait lounge, considering my dear partner absolutely adores them... 😵 I might just have to make off with your suitcase 😛

amberotter28 and I have both decided on Emma... I just haven't made up my mind yet on whether to go with the dark, white chocolate, or whipped cream... I’m not sweating the flavor profile; I know it’ll taste great... it’s the presentation that’s got me worried.

I was 100% set on fondant. I just loved how sleek and polished everything looked... but after talking to all the pastry chefs—who were more than happy to make whatever dream cake I wanted—they all gave me the same professional advice. They suggested sticking with buttercream instead. Apparently, it offers lighter flavor profiles, the servers won't ruin the presentation, and half the fondant doesn't end up scraped off during slicing... so, fine. I've pivoted to a buttercream cake.

Anyway, I got so caught up in the dessert talk that it completely slipped my mind to ask about the logistics. How does the payment work? Specifically, what’s the deposit amount?

We didn't grab any pastries there, so I'm not really sure. My wife just booked the date for the cake, and I'm still sitting here wondering what the flavor profile is actually going to be... What kind of coffee blends are you guys planning on getting? I'd probably go with something light myself... maybe three different varieties, since we've got three floors to cover.

Definitely kept things light...
We just grabbed some parfait—chocolate and vanilla with fruit—and something like an iced coffee slushie.
