It’s about the protein ratio. If we're talking pure whey, you need to know the exact split between standard WPC80 concentrate and isolate. If a blend is roughly 70% concentrate and 30% isolate, that should be stated clearly. You can't just list concentrate, isolate, and hydrolysate without giving the actual ratios. Plus, with brands like Optimal, nobody actually knows the glutamine content because the label is vague, just listing "glutamine & precursors" and leaving it at that...
Flavor matters for sales, obviously. Companies hire professionals specifically to nail that part.
