Does anyone know the name of that smooth frosting or coating they use on fancy wedding cakes?
The lady making my cakes mentioned she’d have to order the supplies from Washington, D.C., but I honestly have no clue where to even look or what the damage might be, so I guess I'm asking for help

Mascarpone. Or whatever the hell they call it. It goes for about $27 a pound, which is just enough for one medium cake layer—so you’re looking at roughly 2 lbs per tier.

Honestly, I have no clue. When I went in to ask about a cake, the lady at the bakery showed me that frosting stuff—it’s sold in those plastic tubs, and I even saw the price tag.
She was totally trying to talk me out of it, saying it tastes mid and that I should just stick with whipped cream.
Anyone actually tried this stuff before?

Look, I’ve got a slightly different dessert dilemma than you guys.

I’m just not a cake person—honestly, I can't stand fancy cakes. They look great on Instagram, sure, but I really don't enjoy eating them.

I'm more about those warm cheese pastries, maybe some classic apple strudels... basically anything that isn't a sugary cake. So, picking a wedding cake is kind of a struggle since nothing feels right.

Any ideas would be awesome.

I used to think a Black Forest cake was decent back in the day, but does that even work for a wedding? Or is it too basic?

I honestly think Black Forest and Dobos cake are the absolute best flavors out there... I’ve been mulling it over myself... I'll just see what my baker suggests when we talk.
The thing that’s actually stressing me out, though, is that the wedding is in June. They’re saying 2007 is going to be an absolute scorcher, and I keep praying to God that my cakes don't just melt into a puddle before anyone can eat them.

Please, as if they’d just melt... they toss them straight into the walk-in fridge once they're done. I think it's set to 40 degrees or something like that. The crew handling them keeps everything chilled, and honestly, every single restaurant has industrial coolers on site, so there shouldn't be any issue at all.

Oh, please, don't be so naive... ladies, you need to keep a close eye on Brooklyn because they frequently fail to put the cake in the refrigerators simply because they claim they've run out of space😬. I've been to four different weddings where this exact disaster occurred—the first was about five years ago, and the most recent was back in May 2006... bottom line: you have to be incredibly firm with them about this👍

It’s delicious—honestly, way better than plain whipped cream.
If you want it, don't let someone talk you out of it just because it's easier for them to make something else. 😘
I actually looked it up online; you can order it from some specialty shops, and I even found a recipe to make it from scratch.

I recently attended a wedding where they served Black Forest cake for the centerpiece, and honestly, it was delicious and beautifully presented. I haven't given much thought to what my own dream wedding cake would look like—perhaps a different flavor for every tier—but one layer would definitely be Black Forest!

The best wedding cake I’ve had in ages was from Vince Lombardi; each layer was split in two—one dark sponge with cherries, the other a light sponge with strawberries... simple, yet absolutely stunning 👍

As for the cake selection, I haven't quite reached a final decision yet... though I can say with certainty that there will be at least one Black Forest cake at our gathering 🙂 my dear husband absolutely adores them, so... perhaps alongside that, I might lean toward something fruit-based—maybe featuring those raspberries, you know, the light pink ones rather than the dark variety... paired with a delicate, airy cream, perhaps vanilla-infused, which sounds quite lovely to me...
However, I am somewhat uncertain about the logistical possibilities, given that we are planning to stack one cake atop another, so we really ought to consult with the local bakery to see what they suggest... or, alternatively, an ice cream cake would be simply divine... truly, that would be the absolute dream of mine...

Just one question: how far in advance should I be worrying about ordering cakes and pastries?
Will they deliver the desserts directly to the venue, or am I responsible for getting them there myself?
Also, which specific treats are considered essential? I'm not entirely sure of all the names.

So, I hit up this little bakery over on Broadway yesterday and had the most incredible cake.
It was one of those dark chocolate Forest Cake things, and oh my god, it was just... perfection.
Seriously, my mouth is watering just thinking about it.
I’m dying to know—has anyone else grabbed a slice from them lately, or is anyone planning to go?

Well, Arthur Turner17, those local bakers who specialize in weddings generally already know which varieties are traditional for a reception... unless, of course, you have some very specific cravings of your own. In our neck of the woods, you'll typically see things like classic lemon bars🙂, perhaps some white chocolate cream pies, honey cakes, and those other standard crowd-pleasers... but they are truly delicious. 🙂

The baker I'm working with plans to bake everything herself, then carefully slice and arrange the treats on individual platters before delivering them straight to the hall. I assume most vendors operate under a similar arrangement...
