BTW, that webpage only lists American instructors—it doesn't include the ones who are certified through the original Japanese association. But honestly, it doesn't matter much; just send over the info once you have the details on that course. I actually know two girls who are interested...
Honestly, you’re probably not going to find a better course here in the States. Besides, Bruno Cosim is a top-tier physiotherapist and has been running taping workshops for a long time now. He’s actually a pretty big deal over at the APTA.

Just a heads-up, Kinesio Tape is really just a brand name. They were the ones who pioneered these tapes, but nowadays there are plenty of manufacturers out there, all offering their own "licensed" courses for their specific brands. For me, when I'm looking at continuing education, it's all about the actual knowledge—I don't care much about the piece of paper itself. Personally, I use both Strintex and Kinesio tape, and they're basically the exact same thing. Beatty Carrier runs the courses for Strintex, though I'm not sure when she'll be back in the US... She really knows her stuff, too; she’s written some fantastic books, like one on the Swiss ball which was one of the first guides on using them in rehab.
If you're looking to try a similar diet, you could stick to egg whites, chicken or turkey breast, and load up on fruits and veggies. Honestly, cutting out carbs entirely isn't even that healthy. You really need some good carbs in your system—think brown rice, boiled potatoes, or maybe some whole grain bread instead of the white stuff. Also, don't sleep on legumes; they count as veggies but pack a great protein punch. Soy is a solid option too. At the end of the day, it all comes down to eating a balanced diet and staying active. Unfortunately, if you aren't moving much, you're just losing muscle mass while the fat stays right where it is. Your weight might stay the same, but you're actually doing yourself a disservice...
