It’s pretty much like making a savory oatmeal bowl, except instead of using that sugary stuff, you toss the oats in halfway through the cooking process 🙂
So, you just throw the oats in and give it a good stir. Once everything is done (meaning the oats have softened up and basically melted into the mix), you scoop it all onto a plate. Then, I top the whole thing off (once it's on the plate) with about 5 spoonfuls of roasted red pepper spread.

Honestly, one of my absolute favorite meals ever is just chicken, rice, and some veggies.
For the chicken, I marinate the breast just like I would any other meat. Basically, I grab some oil, oregano, parsley, seasoned salt, celery salt, sea salt, black pepper, crushed red pepper, and this custom blend of Mediterranean herbs I keep on hand. Then, of course, I let it sit for a bit—well, depending on how much time I have. But honestly, the longer it sits, the better, because it just soaks up all those amazing flavors.
When it comes to the rice, I start by sautéing some chopped onions in a pan. Once the rice is cooked, I stir that onion right in and toss in whatever extra spices I’m feeling that day.
