Just ditch that McAfee SDK driver or whatever the hell it’s called. You don't need it. It crashed on me, and from what I can tell, it's prone to causing issues...
Four VMs? And running SQL Server at the same time? Don't even think about going under 12GB of RAM, or you're gonna kill it... It's a gaming-grade mobile processor, so you're fine there. Everything else looks alright, but seriously, bump that RAM up to 12GB if you want to handle that kind of load.
Grab Malwarebytes and run a scan with it. I've only seen issues like this when dealing with actual viruses or people who go messing around in the registry or Windows system folders...

Since I can't see your total RAM Usage or what kind of CPU you're running, I can't really tell you if this is normal or not... Just curious, how long after booting up Windows does the CPU/RAM spike hit? And what are you actually doing when it happens?

Honestly, there's a slim chance the GPU is actually dying. You could nail that down pretty easily with a stress test... maybe try running 3DMark or something similar if you can...
Alright, we figured some stuff out, but now we need someone with more brains and actual experience to take a look at what we've got. The New Guy might be our best bet here. Try reaching out to him and see what he thinks...
Smells like a faulty PSU to me. It’d be smart to stress test it with some heavy hitters like the new Watch Dogs or The Witcher 3... just to see if you're looking at a software glitch or actual hardware failure.
The symptoms you mentioned suggest things are cutting out under heavy load. Since you've got all those new parts, my money is on the power supply. Maybe try borrowing a modern PSU from someone and see if it still crashes, even on max settings.
